Soup
Boil turkey neck, noodles and vegetables (celery, parsnip, carrots) in water for 2 hours. Remove necks.
Delicious Green Beans
- Sauté diced onions and lots of garlic
- Add green (or wax) beans and continue to cook
Töpörtyus Pogacsa (Bacon Biscuits!!)
- 16oz bacon diced, fried to a crisp, grease squeezed out (1 cup)
- can also be made with onions or cabbage
- 3.5 c flour
- 2.5 sticks butter
- 1 egg
- 6 teaspoons yeast with 1/4 c warm water
- knead flour and butter
- add egg and yeast + 1 T salt, bacon bits, 1 cup sour cream
- knead together
- rise for 2 hours
- when it doubles, roll to 1 inch thik
- cut 1.5 inch circles and place on baking sheet
- bake at 375 for 24-28 min
Langos
- 1.5 c flour
- 4 t yeast with 1/4 c warm water
- ~3/4 c water
- 2 t salt
- mix until dough doesn't stick to bowl
- let rise for 1 hour until double size
- heat 1/2 inch oil very hot
- grab chunks of dough, stretch thin, fry for 2 minutes, flip after 1 minute
- add garlic salt
Creamy noodles
- Cook penne noodles
- Saute vegetables (onions, peppers, whatever else you have)
- add cream cheese and sour cream to vegetables and continue to cook
- add mixture to noodles and serve with LOTS OF PAPRIKA
Cottage cheese bacon noodles
- Cook bacon crispy and pat dry
- Cook noodles
- Saute peppers, green onions, etc
- Combine bacon, noodles, peppers, green onions, cottage cheese and sour cream
Nagymama Noodles
runny (new):
- 5c flour
- 4 eggs
- 1t salt
- 3 1/4c water
old:
- 3c flour
- 1t salt
- 3 eggs
- 1c water
chicken:
- 2 1/2 lb chicken pieces
- melt 1 1/2T butter and 1 1/2T oil in pot
- Add 1 c chopped onions and 2T paprika
- Simmer
- 1/2t salt
- 2 cups chicken broth
- bring to boil
- add chicken
- simmer 1 hour covered
- combine 1t flour and 1c sour cream, add to pot
- heat slowly until warm
- serve
